On any given day, you can walk into Schwai's in Fredonia, Wisconsin and find Tommy Schwai and his brother, Mike, hand-crafting the very best of the best in bratwursts. It was their father, Joe Schwai, who started the tasteful tradition of fine German bratwurst crafting at his butcher shop/tavern in Cedar Creek, Wisconsin back in the 1940's.

Today, Tommy has expanded operations to his own meat processing plant location in Fredonia, Wisconsin.  Additionally, you may find him doing remote brat fry's at many of Wisconsin's most popular gatherings.

Schwai's brats have been hailed as having "no equal" in the Milwaukee Journal Sentinel. Not only are they unique because of their extremely generous size, but due to their premium meat, low-fat content,  upon grilling, you will find them virtually unshrinkable!

Proud of his family's tradition of using only high quality lean meat, Tommy is first to point out that his brats contain absolutely no MSG. Schwai's brats are hand-crafted in the German tradition of using only the finest AAA Choice lean cuts of meat, not cut off scrap pieces like used to mass produce most other brats. You won't find any "Quick Cures" here - all brats are made with all natural casings. Schwai's brats have "no shrinkage" due to the fact that only lean cuts of meat are used.  Less fat - less shrinkage! Schwai's are naturally "low fat brats"

All of Schwai's smoked meats derive their uniquely succulent flavor from their authentic hickory and hardwood natural smokehouse.
