(Mom's) German Rhine Potato Salad
(This is a nice light,
refreshing Potato Salad which tastes even better the next day!) |

Potatoes
(12 small red or 6 Yukon Gold)
Boiled for about 20 minutes, peeled & thinly sliced, about
1/6" thick slices |

water |

Diced
Onions (Preferably sweet Vidalia or similar) |

Chopped
Chives |
| 1/4

Salad
Oil (Preferably extra Virgin Olive Oil) |
| 1/4

Apple
Cider Vinegar |
| 1 |
Beef
Bullion Cube |
| 1 T |
Corn
Starch |
| 1/2

Salt
& Pepper (or to taste) |
| DIRECTIONS |
| Heat salad
oil on medium heat. Wisk in corn starch, roast until light yellow -
about 5 minutes. Stir in hot water with beef bullion cube dissolved
in it, then add vinegar.
Pour mixture over
thinly sliced potatoes. Add chopped onion and chives. Salt and
pepper to taste (additional vinegar can be added to taste). Store in
refrigerator. |
